Honky Tonk Porky Pies


2x 350g of cold Slo Moe’s At Home Pulled Pork
1 onion
1 carrot
2 gloves of garlic
1 celery stick
1 can of diced tomatoes
1/2 cup of plain flour
1/3 cup of olive oil
5 sheets of frozen shortcrust pastry, partially thawed
1T knob of butter
1T of milk


Preheat oven to 180°C.
Finely chop the onion, carrot, garlic and celery and fry in saucepan until aromatic.
Add the canned tomato and flour and take it off the heat.
Stir into a large mixing bowl, adding the cold Moe’s At Home and mixing well.
Grease two 12-hole, 1 1/2 tablespoon-capacity round-based patty pans.
Using a 6.5cm cutter, cut 24 rounds from half the pastry sheets. Line prepared pan holes with rounds.
Spoon mixture into each pastry case.
Using a 6cm cutter, cut 24 rounds from remaining pastry.
Tope with rounds and press edges together to seal.
Brush tops with milk.
Bake for 18 to 20 minutes, or until pastry is golden and pies heated through.
