Slo Moe’s Footy Feast

Get the team together for a feast on AFL Grand Final day (or any other day of the finals series). We have crafted a fully loaded feast with pizza, pull-aparts and a hearty dip that has to be tasted to be believed. Satisfy the whole squad and keep them cheering until the final whistle blows. We hope you have as much fun chowing down on this spread as we had pulling it together.

Meat Me at the MCG, Cob

Serves 6

Ingredients

  • 1 tbs olive oil
  • 1 red onion, diced
  • 2 bacon rashers, diced
  • 2 tsp garlic paste
  • 200g frozen spinach
  • 1 Cob loaf
  • 250g block cream cheese, softened
  • 400g tub sour cream
  • Slo Moe’s BBQ Lamb
  • 1 cup grated mozzarella

Method

  1. Preheat oven to 180C/160C fan-forced.
  2. Heat oil in a large frying pan over medium heat. Add the bacon and cook until crispy. Remove from pan and place in a bowl. In the same pan, add the onion and garlic, and cook until softened. Remove from pan and add to your bacon. Leave to cool.
  3. Line a large oven tray with baking paper. Place the loaf in the tray and cut a 4cm lid off the cob loaf. Scoop bread from the centre of loaf, leaving a 1.5cm edge. Roughly rip the bread into chunks. Arrange bread chunks and lid in a single layer around the loaf.
  4. Combine cream cheese, sour cream, mozzarella in a bowl. Add Slo Moe’s BBQ lamb, the bacon and onion mix, and season. Combine. Spoon mixture into loaf.
  5. Bake for 20 minutes or until the bread is golden and crispy. Serve warm and dig in. Your mates will be stoked regardless of the final score!

Get a Pizza the Action

Serves 6

Ingredients

  • 6 small pizza bases
  • 1/2 cup pizza sauce
  • 1 cup mozzarella cheese, grated
  • 2 bacon rashers, thinly sliced
  • 75g mushrooms, thinly sliced
  • 1 chorizo sausage, thinly sliced
  • 1/2 red onion, thinly sliced
  • 100g roasted pepper strips, chopped
  • Slo Moe’s Beef Brisket, sliced into small chunks
  • 20g rocket leaves, to garnish

Method

  1. Preheat oven to 220C.
  2. Line an oven tray with baking paper and place your 6 pizza bases on top.
  3. Spread the bases with pizza sauce and sprinkle with half of the cheese.
  4. Top the bases with chunks of Slo Moe’s Beef Brisket, mushroom, chorizo sausage, bacon, red onion and roasted pepper strips. Then sprinkle with remaining cheese. Bake in the oven for 15 minutes or until the cheese is golden. Garnish with rocket and watch them disappear before your very eyes.

Pulled a Hammy

Serves 6

Ingredients

  • 6 bakery damper rolls
  • 60g butter, softened
  • 1 garlic clove, crushed
  • 1 cup mozzarella cheese
  • Flat-leaf parsley, to garnish
  • Jalapenos, to garnish
  • Slo Moe’s Pulled Pork

Method

  1. Preheat oven to 220C/200C fan-forced and grease a medium-sized frying pan.
  2. In a small bowl, combine the butter and garlic.
  3. Grab your damper rolls and make two vertical slices, being careful not to cut the whole way through. Pull the slices apart slightly and spread with your garlic butter mixture.
  4. In the greased pan, place the damper rolls and spoon Slo Moe’s Pulled Pork into the slices. Sprinkle with cheese and bake for 15 minutes or until the cheese is golden.
  5. Garnish with flat-leaf parsley and jalapenos. Devour immediately!
