Slo Spuds

Ingredients:

20 small spuds
1/2 cup of olive oil
500g of sour cream
250g of cream cheese
1/2 cup of shredded mozzarella
1/2 cup of grated Parmesan
1 bunch of chives
1 bunch of parsley
6 spring onions
350g of lamb
350g of pork

Method:

Pre-heat oven to 200
Spike spuds all over.
Lay on a baking tray and drizzle with olive oil.
Bake for 50 to 60 minutes, or until tender
Mix sour cream, cream cheese, mozzarella, Parmesan, chives and parsley in a large bowl.
Cook does at home according to instructions
Cut a cross section over each potato
Spoon cheese mixture and meat over the top of spuds.
Sprinkle with chopped spring onions and cheese and serve
