Tex-Mex Tijuana Tacos

Ingredients:

1 Green Capsicum
1 Red Onion
2 Garlic Cloves
2 Green Chillies
1 Handful Of Cherry Tomatoes
1 Bunch Coriander Lime
1 Handful Of Field Tomatoes
Olive Oil
Soft Corn Tacos
Sour Cream
Avocado
350g Of Moe’s At Home Beef Brisket

Method:

Pre heat grill to 200 degrees.

Halve the capsicum and chillies, separate the onion and place the garlic and cherry tomatoes on a baking tray.

Grill for 10-12 minutes.

Cook meat as per packet instructions.

Add olive oil, all grilled vegetables, coriander and lime to a bar mix and blend.

Roughly chop field tomatoes and add to the blitzed sauce.

Serve on soft corn tacos with sliced avocado, a dollop of sour cream, brisket, chilli sauce and coriander.
